Repair vs. replace
A dead range at 5pm kills the ticket line and burns comp checks. Commercial range calls are dispatched same-day when placed before 11am; after-hours available.
Every gas-range repair is done by a gas-certified tech. Combustion tuning, gas-leak diagnosis, and safety-valve work are core competencies.
A griddle running 30°F hot burns product and drives fat cost. Thermostat calibration is included on every griddle PM.

If your equipment is down right now
Confirm the manifold shutoff is open. About 15% of no-heat calls are upstream utility issues — a closed valve or a tripped restaurant gas solenoid tied to the hood.
Look for steady pilot flames on open-burner ranges. A pilot that won't stay lit is almost always a failing thermocouple.
Snap the controller and error codes on newer ranges (Vulcan V-series, Garland Master). Send the photo when you call.

FAQs
Almost always a failing thermocouple. The pilot flame heats the thermocouple, which holds the pilot safety valve open — a marginal thermocouple can't hold the valve. Thermocouple replacement is truck-stocked.
Yes — Wolf commercial (not residential Wolf, which we also service under our Sub-Zero / Wolf residential program). Burner and pilot service, thermostat, gas valve, ignition. See our Vulcan and Garland pages for those brand hubs.
Yes. Thermostat calibration is included on every griddle PM and available as a stand-alone visit. Miscalibration is a common driver of burned product and elevated food cost.
Yes — radiant and lava-rock charbroilers, and infrared salamander / cheesemelter broilers. Burner and radiant replacement, thermocouple, gas valve, rack mechanism.
