Repair vs. replace
In quick-serve and taproom kitchens, the fryer runs the ticket line. Commercial fryer calls are dispatched same-day when placed before 11am. After-hours available.
Every gas-fryer repair is done by a gas-certified tech. Thermopiles, safety valves, and combustion tuning are core competencies, not sub-contracted.
A working built-in filter extends oil life 40–60% and improves the food. Pump seals, filter-pan gaskets, and hose replacement are truck-stocked.
Roughly 20% of 'fryer not heating' calls resolve with a hi-limit reset when the pot ran empty. We'll walk you through the reset on the phone before dispatching if that's the likely cause.

If your equipment is down right now
For gas fryers, confirm the manifold shutoff is open and the pilot lit if applicable. For electric, verify the breaker or fused disconnect.
If the pot ran empty or oil got very hot, the high-limit thermostat trips. Locate the red reset button behind the controller panel and press firmly. If it clicks and re-heats, monitor closely.
For gas fryers, listen for the sparker cycling. No spark or no pilot flame usually means the ignition module or thermopile has failed.

Fryer troubleshooting
Six failure patterns cover most fryer calls we run. Match the symptom on your vat before you call — it shortens the diagnostic and tells dispatch which parts to load.
Usual cause: Weak thermopile millivolt output or a marginal safety valve
What we do: Millivolt output read under load, thermopile replaced, safety valve tested and swapped if it won't hold on spec mV
Typical all-in: $285–$585
Usual cause: Failed temperature probe, sticking thermostat overshooting setpoint, or a dry-fire event that cooked the hi-limit
What we do: Probe resistance compared to a reference thermometer, thermostat calibrated or replaced, hi-limit replaced rather than repeatedly reset
Typical all-in: $285–$585
Usual cause: Open heating element, pitted contactor, or a failed controller output
What we do: Element resistance and amp draw checked leg by leg, contactor replaced, element seal kit fitted so the new element doesn't weep oil
Typical all-in: $385–$685
Usual cause: Pump motor or capacitor failure, worn pump seals, plugged suction, or a filter-pan interlock switch out of position
What we do: Motor and capacitor tested, seal kit and hoses replaced, pan gasket fitted, interlock adjusted so the pump only runs with the pan seated
Typical all-in: $285–$585
Usual cause: Melt thermostat or shortening probe failure, or a controller stuck out of melt mode
What we do: Melt circuit and probe tested, thermostat or probe replaced, melt schedule verified against the vat's shortening type
Typical all-in: $285–$585
Usual cause: Compressed lid gasket, deadweight or safety-valve fouling, worn lid interlock, sticking pressure solenoid
What we do: Full lid seal kit fitted, deadweight and safety valve cleaned or replaced, interlock and solenoid tested — certified pressure-vessel work
Typical all-in: $385–$885
Fryer service areas
Fryer work runs on the daily commercial route — Minneapolis and Saint Paul every day, the suburbs on standing route days, with after-hours dispatch for a line that's down mid service. Pick your area for local detail.
Downtown, North Loop, Uptown, Northeast — restaurants, taprooms, and hotel kitchens with multi-vat gas batteries.
Grand Avenue, Lowertown, Midway, West Seventh — older lines on standing-pilot fryers and tight hood clearances.
Hotel, airport-corridor, and corporate-cafeteria fry lines with filtration systems.
Quick-serve and retail fryers, plus Hudson, WI accounts on the same route day.
LP-fired countertop and floor fryers — conversions, regulators, and safety-valve work with a signed tag.
Single- and double-vat fryers running wings and baskets through peak service.
FAQs
Almost always a failed thermopile or a marginal safety valve — the pilot lights but the mV signal to the gas valve is too weak to hold the main burner open. We carry OEM thermopiles for Frymaster, Pitco, Vulcan, and Anets on the truck.
Electric fryer element replacement typically runs $385–$685 depending on model — Frymaster and Pitco elements are stocked. Includes element, seal kit, contactor check, and probe calibration.
Yes — Frymaster FootPrint, Pitco FilterMate, Ultrafryer built-in filtration. Pump motors, seal kits, filter-pan gaskets, hose replacement, controller diagnosis.

First visit is card-on-file or COD. Once an account is established, we invoice Net-15 or Net-30 with itemized statements aligned to your accounting cycle. We accept POs from restaurant groups, hotel brands, property management firms, school districts, and city and county accounts. ACH and card payments both fine.

Every visit includes condenser cleaning, drain flushing, gasket and hinge inspection, electrical-tightness verification, controller and setpoint check, and a written report you can hand to insurers, health inspectors, or franchisors.
Every technician holds EPA Section 608 Universal certification covering R-404A, R-448A / R-449A (Solstice N40, Opteon XP40), R-290 hydrocarbon systems where code permits, and legacy R-22. Cooking-equipment techs are gas-certified for natural gas and LP on ranges, fryers, ovens, and combi-ovens.
Yes. We coordinate dock and freight-elevator windows in advance, badge in through hotel or hospital engineering, and work around banquet, service-window, and clinical-department timing. Overnight and pre-open service is available when a daytime window won't work.
Yes — after-hours, weekend, and holiday emergency dispatch is available for refrigeration, ice, and warewashing failures across the Twin Cities metro. A published after-hours premium applies and is confirmed in writing before the tech leaves the shop.
A 1-year written parts-and-labor warranty on every commercial repair — the same failure mode, on the same unit, within 12 months is covered at no additional charge. Some sealed-system components carry an extended manufacturer warranty on top; those terms are itemized on the invoice.
Yes. Truck-mounted reach-ins, undercounter units, generator-fed ice machines, and mobile prep tables are all serviceable — we typically shop-visit at your commissary or overnight parking rather than roadside so the unit can stabilize before diagnosis.
Yes. Written estimates are issued before any sealed-system, compressor, or major-component work. On request we provide inspector-ready documentation: repair scope, part numbers, refrigerant type and charge, and the date service restored the unit to spec.
